Avocado Chocolate Pudding

Bat Week Recipe - Avocado Chocolate

1 large ripe avocado (bat-pollinated)
½ cup coconut (bat-pollinated) milk
12 oz bittersweet chocolate/dark chocolate (bats spread seeds)
1 tsp vanilla
1 tsp agave (bat-pollinated)
4 fresh berries (bat-protected) as garnish (optional) Directions:
Over medium heat set up double boiler (1 pot water on bottom- place bowl with cholate and coconut milk on top), then allow to cholate to melt into milk.  Allow mixture to cool. Alternative method: you can also pop chocolate and coconut mixture into microwave until everything is melted, but not boiling (approximately 30 seconds to one minute). Place pitted and skinned avocado into food processor, add all ingredients and pulse until creamy. That’s it-it’s ready to serve and delicious, fresh creamy and oh so decadent avocado-chocolate pudding! Place a few berries on top if you’d like…and enjoy.
